Sushi is one of the typical Japanese cuisines putting or mixing sea-food and vegetables on vinegrated or salted rice.
History of Sushi
There is a record of loach’s Sushi from a shrine which has more than 1,000 year-history in Siga. Even though it is unclear, they said this is the origin of Sushi. After that, loache took placed with trout, and it was spread nationwide.
Although Nigiri-sushi, which most of people imagine as Sushi has various theories where it origined, the most prevailed one was that a merchant from Satsuma-han hawked Sushi and built a restaurant with the money he earned in Edo era. They say that this is the very first Nigiri-sushi.
Based on this, sushi has been combined with many other seafoods gathered from entire Japan, and now you can see Sushi today.
Kinds of Sushi
This one-bite-size vinegrated rice called Shari with seafood on top is considered as the most typical Sushi.
Sushi made from 2-3 kinds of seafoods put on top of thinly spread shari (flavored rice), and rolled in seaweed with the use of makisu (bamboo mat)
There is some varieties of Maki-sushi: rolled seafood called Huto-maki, 2-3 seafood ingredient maki called Chu-maki, and 1 ingredient maki called Hoso-maki.
Oshi-sushi is made from shari and seafood pressed together and fermented for a long time. Some say that this Oshi-sushi is the origin of sushi. This is more popular in western area of Japan.
Chirashi-sushi has 2 types, one is made up of many seafoods and shari put in a bowl which originated from Edomae-sushi. Another is a mix of shari and ingredients for celebration called Bara-sushi.

How to eat like local
Raw fish can easily get dry, therefore, Sushi needs to be eaten as soon as served in one bite.
Do not order everything at once. Better order 2-3 sushi per order. Basically, you eat with your hand, but nowadays using chopsticks is also fine.
Do not dip shari into soy sauce. Although there is no specific eating order for Sushi, better to start with mild taste going to strong taste so the strong taste does not bother your tongue first. Even you eat it with your hand, you have to use chopsticks when you eat Gari which is marinated ginger.
Most of sushi has Wasabi. If you are not good at wasabi, you say “sabinuki” to order it without wasabi.
Famous place to eat Sushi
Edo (currently called Tokyo) is the most famous for Nigiri-sushi. Usually, there are good sushi bars famous for their seafood.
Eho-maki is known as a lucky food and is famous in Osaka.
Kansia is for Mackerel-sushi, Toyama is for Trout-sushi, Kanagawa is for Sardine-sushi, and Mie, Wakayama, and Nara is for Saury-sushi.
Barachirashi-sushi, which has many seafood, is famous in Kanto.
Chirasi-sushi which has vegetable such as shiitake mushroom and bamboo shoot is famous in Kansai.
They say that Inari-sushi originated in Toyokawa city, Aichi
