Kochi is a land with temperate climate surrounded by the ocean and boasts of many delicious foods, but the most recommended is the "Seared Bonito". The surface of a thick cut of bonito is seared in the flame, sprinkled with salt, tendered thoroughly, then eaten with green onions, ginger, garlic and other seasonings. You can also have it with yuzu or ponzu sauce.
