The owner and chef, Mitsuru Yoshihara, is a major figure in the world of French cuisine, renowned for creating a base for French cuisine in Japan and opening a path for future generations.
In the 1970's, Chef Yoshihara trained at a historically famous restaurant, a pioneer in introducing French cuisine to Japan.
In 1976, Chef Yoshihara left for Geneva to further his training.
Chef Yoshihara trained in restaurants and hotels in Paris, Lyon, and Nice, and later became the head chef at an auberge in Nice with a large French staff under his direction.
After this accomplishment, Chef Yoshihara returned to Japan and worked for many years as head chef at a famous restaurant in Tokyo.
In 1990, Chef Yoshihara opened a private-style restaurant called "La Chance" in Kojimachi which continues to offer the highest quality food and service that satisfy even the most discerning connoisseurs in the Nagata-cho and Bancho areas.
