We use free-range Japanese chicken, Tamba chicken, farms in a vast nature. Boasting its soft texture, the chicken offers rich in flavor. Tamba chickens are shipped from nearby location to offer freshly prepared chicken in the morning for the exquisite freshness.
For salt bringing out the natural taste of chicken, we use mineral-rich Akaho salt that matches with the taste of Japanese. Two types of roasted Akaho salts are used depending on the roughness, one to use for seasoning and the other to finish up the taste. Our secret sauce is made with meticulously selected soy sauce, condiments and pot herbs blended with Belgium beer.
