A Shanghai cuisine embodying 4,000 years of Chinese tradition and taste, prepared using Japanese and Western techniques.

Our sharkfin is mainly from Kesennuma in Miyagi, while the meat and vegetables are delivered fresh to us seasonally from all over Japan.
The stock soup is perhaps the heart of high-class Chinese cuisine, and at Suiran, we use the stock made using only adult hens bred in Chiba, and domestically produced beef and pork, simmered over 6-7 hours. Dry ingredients used particularly in Chinese cuisine are purchased in China, where once a year, we would personally go and select those ingredients. Only the ingredients that meet our exacting standard are purchased. We have prepared a menu that will reflect the ever changing seasons of Japan. Please savor the taste of our Suiran brand Chinese cuisine.
