We offer beef from bone-in, whole Japanese black cows dry aged – the ultimate aging process – for more than 45 days.

Tajimaya's aging process doesn't just make hard meat softer.
It extravagantly makes Japanese black beef, such as Kobe beef and Sendai beef, even more delicious.
We allow whole cows to dry-age slowly and carefully for more than 45 days in an original dry-aging chamber which thoroughly controls temperature and humidity.
This way, Japanese black beef becomes more “Japanese black beef-like”, being packed with delicious flavors and having increased fat sweetness.

Our dry aging process gives the best results on the T-bone steak, bringing out its best delicious flavors.
