A long-established soba restaurant since July 1929. We established a buckwheat field at Hanase in Kyoto with a passion to make hand-kneaded soba noodles.

A secret of good soba lies in a sophisticated skill of "Kibachi" technique of mixing buckwheat flour and water, a "noshi" technique to roll out the dough which requires a swiftness and an accuracy, and a delicate"Hocho" work technique of slicing the dough into thin noodles. Using these techniques in the process of making "freshly ground, freshly kneaded, and freshly cooked" soba, then finally very smooth authentic soba is created. Yukiya's original special dipping sauce will bring out the beauty of the freshly cooked flavoursome soba. Enjoy Japan's and Kyoto's soba culture as a memory of your trip.
