Founded in 1972, the Umenishiki Yamakawa Brewery is celebrated all over Japan for superior quality and for spurring a boom in local sake production. Although a large organization ranking fiftieth in the nation for output, it nonetheless preserves traditional techniques for everything from select to standard brews. Venerable methods and meticulous care constitute the company¡Çs basic policy. Umenishiki Yamakawa sake is rich, fruity, slightly sweet, and refreshing. Employing many different kinds of rice, the company has a very diverse lineup of products. Tours of the sake storehouse and sampling of Umenishiki sake, local beer, and distilled liquors. 1. Tours are held year round. Guests may observe sake-making from November to March. Tours last about 90 minutes. 2. Reservations (1 to 50 people) must be made a week in advance. 3. Specialists conduct the tours (interpreters necessary).
